"Hot Dogs" on a Stick

These are great with gourmet sausages, but your favorite hot dogs will work well, too.
PREP TIME: 35 minutes
1 egg yolk
24 pre-cooked sausages
Puff-pastry sheets, defrosted
24 skewers
1/2 tsp water
**Mango Chutney- Red Onion Relish**
1 (9-ounce) jar mango chutney
1/2 cup chopped red onion
1/4 cup chopped fresh cilantro
1 tablespoon Dijon mustard

Preheat oven to 375°F.

In a bowl, beat the egg yolk with 1/2 tsp of water.

Cut the sausages in half.

Cut the puff pastry into 1/2-inch strips. Cross them to make an "x" and wrap them around the sausages
Place prepared sausages on a baking sheet and brush  with the beaten egg yolk.

Bake until golden, 15 to 25 minutes. Remove from oven, push a stick into each sausage, and serve warm with mango chutney- red onion relish for dipping.
Mix chutney, onion, cilantro, and 1 tablespoon mustard.
Cover and chill-Can be made 1 day ahead.
