Minted Chicken Brochettes

The combination of flavors from the mint to the salty citric taste of the preserved lemons give this dish a thumbs up....A must at your next cocktail party!

14 oz. chicken thighs, boned & skinned

16 green olive stuffed with garlic

2 T virgin olive oil

1 oz. preserved lemons, pith removed and diced

2 T cilantro, finely chopped


Garlic clove, crushed

4-5 mint leaves

3 T olive oil

1/2 t cardamom

1/4 t ground cinnamon

1/4 t ground ginger

  1. Combine all marinade ingredients in a medium size bowl, add chicken thighs, cover and refrigerate overnight.  The next day cut chicken into bite-size pieces.
  2. Using a grill pan, brushed with olive oil, place on medium high heat.  Place chicken pieces on hot pan and grill about 5 minutes, turning as needed to brown.  Remove from heat and keep warm.
  3. While the pan is still hot grill olives until lightly browned.  On 8 wooden skewers thread one olive, two chicken pieces, and another olive.  Place on a serving dish.
  4. Combine diced cilantro and preserved lemon in a small bowl and sprinkle over brochettes. 
  5. Mix marinade ingredients and drizzle over brochettes and serve.
