Greek-Style Quesadillas

Who doesn't love a Greek salad?  Put it on a pita...Add a twist, cheddar cheese, and you have a 'fly off the plate' appetizer!

COOK TIME: 6 min.

1/2 small English cucumber, seeded & small chop

1 red onion, thinly sliced

2 large tomatoes, small chop

1 t dried oregano

1/4 c red wine vinegar

1/2 c  olive oil

1 c feta cheese

2 garlic cloves, minced

16 black olives, small chop

8 pita breads

1 1/3 c cheddar cheese, shredded

  1. Combine cucumber, onion, tomatoes, oregano, vinegar and 1/4 c olive oil in a small bowl and let stand for 20 minutes.  Drain thoroughly and set aside.
  2. In a small bowl, mash together the feta cheese, garlic and olives.    Spread the tops of four pitas with the feta mixture.
  3. Divide the cucumber mixture over the four pitas, sprinkle the cheddar on top, then cover with the remaining pitas to form sandwiches.
  4. Heat the remaining oil in a large fry pan over medium heat.  Cook the "quesadilla" until the cheese melts, about 2-3 minutes per side.  Cut into 4 wedges per sandwich.  Serve warm or at room temperature.
