Shrimp Cream Puffs

These puffs are so simple to make and keep in the freezer, ready to use at a moments notice for an appetizer or dessert.

COOK TIME:  35 minutes

Cream Puffs:

1 cup water

1/2 cup butter

1 cup flour

4 eggs

Shrimp Filling:

1 cup shrimp, diced

1 cup American cheese, grated

1/2 cup mayonnaise

  1. Puffs:  Heat oven to 400°F.  In a medium sauce pan, bring water and butter to a rolling boil.  Reduce heat to low, add flour, all at once, and stir vigorously until mixture leaves the side of the pan (about 1 minute).  Remove from heat; beat in thoroughly, one at a time, 4 eggs.  Beat mixture until smooth and velvety.  Drop from spoon onto an ungreased cookie sheet.  Bake for 20 minutes.  Puffs should be fairly dry.  Cool puffs on wire rack.  Cut tops and remove inner contents.  Let set until interiors are completely dry.  At this stage, puffs can also be frozen for use at a later time.
  2. Filling: Heat oven to 300°F.  In a medium sized bowl stir together shrimp, cheese and mayonnaise.  Fill each puff and top with the puff top.  Place puffs on baking sheet and bake until shrimp mixture bubbles; approximately 10-15 minutes.
