Guacamole Stuffed Cherry Tomatoes

INGREDIENTS

30-40 cherry tomatoes

3 avocados, peeled and mashed

1/2 cup tomato, diced

1 garlic clove, peeled and minced

1-1/2 tablespoons onion, diced

3 tablespoons fresh cilantro, chopped

2 tablespoons fresh lime juice

1 jalapeno pepper, seeded and diced

salt and black pepper to taste

DIRECTIONS
  1. To prepare your tomatoes for stuffing, slice off the top of the tomato (stem end); scoop out the seeds and pulp inside.  Salt the inside of each tomato and place upside down on a paper towel to drain for approximately 10 minutes.
  2. In a medium size mixing bowl, combine avocado, diced tomato, garlic, onion, cilantro, lime juice and jalapeno.  Mix well and season with salt and pepper to taste.
  3. Fill prepared tomatoes with the guacamole mix.  A pastry or piping bag works well for filling the tomatoes.  Place the tomatoes on a baking sheet lined with waxed paper, cover loosely with plastic wrap and refrigerate until ready to serve.  Serve chilled, garnished with extra chopped cilantro.
