Ghoulish Witch's Fingers

These gnarly, crispy, and cheesy fingers will be quickly devoured!!

INGREDIENTS
1 cup packed shredded extra-sharp cheddar cheese, approx. 1/4 lb.
5 T butter
3/4 cup all purpose flour
2 T cornmeal
1 large egg
Kosher salt
30 sliced almonds
1 egg white- beaten
DIRECTIONS
  1. Mix butter, cheese, flour and cornmeal until the mixture has the texture of wet sand.
  2. Add egg and stir with a fork just until dough holds together.
  3. Place dough between two pieces of parchment paper (14"x14").  Pat dough into a 1/2" thick circle.  Remove from parchment paper, wrap in plastic and freeze for 15 minutes.  If making ahead, the dough can be refrigerated for up to 3 days.
  4. Remove dough from freezer and roll (between two pieces of parchment paper) into an 8"x10" rectangle.  Leave dough between the two pieces of parchment paper and return dough to freezer for 15 minutes.  Preheat oven to 350 degrees F.
  5. Remove dough from freezer and peel off the top layer of parchment paper.
  6. Using a sharp knife, cut the dough into 30 strips, each 1/2" thick and 5" long.
    Place each strip on a large baking sheet.  Sprinkle with salt to taste.  With your fingers, round the top of each strip into a fingertip shape.  With a sharp knife score shallow "knuckle" lines in each finger.  Select almond pieces that are the shape of a nail.  Dab a bit of beaten egg white on the fingertip and press an almond "nail" on.  For a more gnarly looking finger, bend each finger in two or three places.
  7. Bake the fingers for 15 minutes or until an even light brown.  Remove from oven and let cool on a rack.  We think these taste best when completely cooled.
