Fruit Salsa with Cinnamon Tortilla Chips

Some recipes are good, and then there are those that are really, really, really good.  This is one of them.

INGREDIENTS

2 Golden Delicious Apples - peeled, cored and diced

2 kiwis, peeled and diced

8 ounces fresh raspberries

1 pound strawberries, cored and diced

2 T white sugar

1 T brown sugar

1 T lemon juice

10 (10 inch) flour tortillas

butter flavored cooking spray

1 cup cinnamon sugar

DIRECTIONS
  1. Put all the diced fruit, white and brown sugars, and lemon juice into a large bowl, mix thoroughly.  Cover and place in refrigerator to chill for at least 15 minutes.  Can be made the night before.
  2. Preheat the oven to 350 degrees F.
  3. Cut each flour tortillas into 8 wedges.  Arrange a single layer of wedges on a large baking sheet.  Spray the wedges with butter flavored cooking spray, then sprinkle the desired amount of cinnamon sugar.  Spray again with cooking spray.  Place in oven and bake for 8 to 10 minutes.  Allow to cool for 15 minutes.
  4. Serve the warm cinnamon chips with the cold fruit salsa.  Yum!!!!
