Cherry Tomato and Bocconcini Lollipops

12 cherry tomatoes, (the larger the better)


12 bocconcini (baby mozzarella balls)

1/2 t grated lemon zest

2 T olive oil

1 T cilantro, chopped

  1. Slice 1/4 - 1/2" off the top of each tomato.  Using a melon baller remove the inner seeds, leaving the shell intact.
  2. Spoon 1/4 t of the tapenade into the bottom of each tomato, followed by one of the bocconcini (you may need to resize the bocconcini to fit your cherry tomato).
  3. Skewer the bottom of each tomato with a large wooden skewer.  Stand the lollipops in a tall glass for an eye-catching presentation.
  4. In a bowl whisk together the lemon zest, olive oil and cilantro.  Drizzle a little over each lollipop before serving.
